Sweet Potato and Kale Breakfast Hash
I thought I’d make up for yesterday’s unhealthy “cheat day” breakfast with a simple delicious recipe I’ve been making a lot lately. This recipe is chock full of vitamin A, probiotics, anti-inflammatory properties and the best part is that it’s also really delicious.
You’ll need:
2 large sweet potatoes (peeled and diced)
1 granny smith apple (peeled and cubed)
1/2 of a sweet onion (chopped)
3 cups of tuscan kale (de-stemmed)
1 tbsp coconut oil
1 tbsp olive oil
salt (I use celtic gray sea salt for its taste and mineral properties)
1. In a large pan sauté the sweet potato and onion in coconut oil for 7-9 minutes stirring occasionally
2. Add the apples and cook for 2-3 more minutes stirring frequently
3. Add the kale and drizzle the olive oil (just enough to lightly coat the kale) cook for 2-3 more minutes
4. sprinkle with salt and serve
I usually serve this with poached or fried over-medium eggs.

Thank you for the sensible critique. Me & my neighbor were just preparing to do some research on this. We got a grab a book from our area library but I think I learned more clear from this post. I am very glad to see such wonderful information being shared freely out there.

I didn’t follow the cooking times and mine came out soggy. I’m going to try again and pay more attention to the times. The flavors blended well together though! I never would have thought of onion going with apple and sweet potato but it totally works.
